This combination stone, designed for sharpening knives, is recommended not only for Kai Shun knives, but also for other professional knives.
The stone restores virtually all knives (except knives with serrated edge), and the process requires submersion in water for 10 to 15 minutes before use.
The stone is coarse grade (300) on one side to eliminate small defects and restore the edge, and fine grade (1000) on the other side to enhance the knife edge for a sharp finish.
